In Vallebona, the tiny village near Bordighera on the western edge of Liguria, there is a “Vecchia Distilleria” di Castelan. At the center are the flowers from his 150 bitter orange trees.

Carefully cultivated with organic methods, they resemble wild oranges, but do not have the thorns. Some of the essences are used in cosmetics, others for relaxing baths or to help colds. The distillation from the orange flowers, Acqua di Fiori, is used in food.
